Often, following tutorials step by step seems to put me in a daze.

So I went searching for some sort of easy goal to move towards.

That is how I found this The 20 Games Challenge website that provides a neat syllabus. 

So, after ~6hr and no Pong tutorials, here we are! It isn't great, since I did not remember how Godot worked and did not plan, I might have put the majority of the code into the ball. I've learned more than I expected, and now I will plan a little more and build the next challenge "Breakout" but with a menu and more than one level. I had trouble making the AI beatable, so I had it track the ball perfectly, but made both the player and AI slower than the ball. Prediction is key!

I got side tracked with the visual effects. That is something I want to look into more. The result here is just a mess, but the ball is only a shader with collision!
